Veggie Fries

Slice 1 medium sweet potato, 2 small parnsips, and a generous handful of green beans.

Toss in olive oil, sprinkle with salt and cinnamon, and bake for 25-30 minutes on 375 degrees.

Can also sprinkle with Mrs. Dash and other spices to change it up.

Serve with dipping sauce of choice.

September Fail

So my goals that I stated on September 1st or 2nd have slightly failed. I’ve gotten hardly any exercise in and definitely haven’t gotten my water in. Yikes!!!

I’m also trying to get used to blogging and it’s getting there but I still must work on it.

So the eats for today:

Breakfast: (Almost) Vegan overnight oats with 1/3 cup rolled oats, 2/3 cup almond milk, chia seeds, cinnamon, sunflower seed butter, dried tropical fruit and homemade plum jam.

Lunch: Michelina’s Lean Gourmet Chicken Club Flatbread and a Diet Coke

Snack: Strawberry cheesecake to celebrate Melz birthday.

Dinner: Leftover pizza from Pizza Hut, some Whoppers, some Reese’s Pieces and some crab rangoon. Definitely not the healthiest. I need to find something better for when I’m in class. Any suggestions?

Day 1 Fail

Okay so earlier I posted my goals for the month. Can I just say that I failed? I didn’t exercise for 10 minutes today and I only drank about 3/4 of the water that I said I was going to drink.

BUT I’m telling you this so I can be accountable because in truth that’s the ONLY way I’m going to be able to live a healthier lifestyle which is my ultimate goal. Thumbs up

So short list of what I ate today:

Breakfast: 2 blueberry Eggo waffles with TJ’s Sunflower Seed butter

Lunch: Taco salad from the DUC

Dinner: Orange Chicken with fried rice and crab rangoon from China King. Granted I didn’t eat all of it and the Man will take it for lunch tomorrow but still…not the best eating day

Okay, my Managerial Economics book calls to me so I must go try to make some sense of chapter 3. Hey, maybe I’ll hit my water goal before I go to bed tonight!!Coffee cup(Pretend it’s a water glass!!)

 

Oh and I’m still getting used to this blogging thing and I don’t know Sh*! about HTML code so bear with me!!

New Month, New Goals

So, it's a new month (obviously!) and I'm going to really try to set (and meet) my goals this month! I have such a hard time with writing anything down because then (gasp!!) I might actually have to strive to meet them. That sounds like I'm so lazy! But that's not the case. What I mean is that I don't like to commit myself to something like goals because if I don't meet them, I get soooooooo depressed and upset with myself. But I'm going to try something new this time

My goals for this month are to:

1. Drink at LEAST 64 ounces of good ol' H2O every single day.
2. Get at LEAST 10 minutes of exercise in a day, no matter what.
3. Try to blog about my accomplishments every day

Okay I need to stop before I delete this!

Parmesan like chicken

So tonight was a baked chicken night so I could do other things while dinner was in the oven. I took 3 frozen boneless skinless chicken breasts and seasoned both sides with lemon pepper, garlic powder, onion powder, cracked black pepper, and kosher salt. I sprinkled some cayenne pepper on one side and put it in a 425 degree oven for 45 minutes. At the 13 minute mark, I poured some Ragu Sweet Italian and Cheese pasta sauce on top of the chicken. I also sprinkled some panko bread crumbs and some mozzarella cheese on top and on mine I added some parmesan cheese as well. I let that cook for another 15 minutes and heated up some Trader Joe's creamed corn while it was cooking. This was such a yummy, easy meal!

Buffalo Chicken Pizza

So, tonight, I made a buffalo chicken pizza and let me just say, it was GREAT!! I forgot to take a picture of it to show you, but it's soooooo easy. Just spread some hot sauce on a pizza crust whatever kind you want, top that with some chicken. Spread mozzarella cheese on that and bake it for about 11-13 minutes or how ever long it takes for your crust to be done. We dipped ours in buttermilk ranch dressing to get the full effect. AWESOME!!!!
